Veg Mexican Bean Burritos with Chilli Garlic Sauce

The vegetable Mexican bean burrito is quite filling and has lots of veggies packed into it. It is a yummy, complete one-dish meal, and a must-try at home. The chilli garlic sauce adds an element of tanginess and spicy nature to the Mexican bean burritos.





Ingredients

  • Tortillas
  • Red beans (overnight soaked) – ½ cup
  • Red chilli powder – 1 tsp
  • Cumin seeds powder – 1 tsp
  • Onion (sliced) – 2 tsp
  • Tomato (sliced) – 2 tsp
  • Capsicum chopped (red and green) – 2 tbsp
  • Salt to taste
  • Oil – 1-2 tbsp (for frying)
